Pasta: Cold Capellini with Cherry Tomatoes

YIELD 2 servings

INGREDIENTS

4 ounces capellini, cooked and rinsed under cold water
1/2 tbsp toasted sesame seeds

BOWL (mixed together and allowed to sit for 10 minutes):
3/4 tsp kosher salt
1 pint ripe cherry tomatoes, halved

PREP:
2 tbsp rice vinegar (regular or seasoned)
1 tbsp soy sauce
1 tsp sugar
1/4 tsp Dijon mustard
1/4 tsp toasted sesame oil
1 large garlic clove, pressed or finely grated
3 radishes, thinly sliced
1 scallion, thinly sliced at an angle

PREPARATION

1. After BOWL has rested, add PREP and mix together. Chill for 2 hours.

2. When ready to eat, divide pasta into two bowls and then divide contents of chilled BOWL between them. Sprinkle toasted sesame seeds on top before serving.
